Spicy Sweet Potato Balls

Ingredients

  • 3 pounds sweet potatoes cooked or 2 (17 ounce) cans, drained
  • 2 tablespoons butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 egg
  • Miniature marshmallows
  • 1/2 cup ginger snap crumbs

Directions

Preheat oven to 400 degrees F.

Mash sweet potatoes while they are hot, then add, butter, salt, and spices. Add egg and continue to whip until thoroughly combined. Chill until firm. Form into golf ball sized pieces and place 2 to 3 marshmallows in center of each ball. Roll in ginger snap crumbs. Place on non-stick or lightly greased baking sheet. Bake for 10 to 15 minutes.

    This recipe had a nice flavour, but the texture of the balls left a lot to be desired. They were quite "mushy" and did not... form into firm balls.Read more

    better if i didn't let the kids make the balls!

    loved the recipe. I let the kids make the balls and of course they forgot the marshmellows half the time. I also made some... with pineapple in the middle and pecans. great!Read more
