You can create up to five timers

Ingredients

  • 2 apples, grated
  • 1 large sweet potato, grated
  • 4 carrots, grated
  • 1 cup matzoh meal
  • 1 stick pareve margarine, melted
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 24 paper muffin cups
  • 2 (12) cavity muffin tins

Directions

In a large mixing bowl, combine all ingredients. Place the paper muffin cups in the muffin tins. Pour the batter into the cups. They should be two-thirds full. Bake for 20 to 25 minutes or until done in a preheated 350 degree oven.

    Horrible recipe. I followed the recipe precisely and the cupcakes came out mushy and bad tasting. My kids thought they smelled good, but when they tasted them they said "yuck" and asked if they could throw out the rest. The preparation was labor intensive and time consuming because of all the peeling and grating (I had to grate by hand which made the unsuccessful dish particularly disappointing.

    I followed the recipe exactly and they were terrible! They were flat and mushy. I even tried cooking them longer, cooling them and lastly, I put them in the refrigerator overnight, but nothing helped. Don't bother making these.

    There is definitely something wrong with this recipe, something is missing. Didn't read the reviews, would have not made this so don't waste your time until it is revised.
