Ingredients

  • 1 cup all-purpose flour
  • 11/2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 4 pounds chicken parts (legs, thighs, and breasts)
  • Olive oil, for searing and sauteing
  • 6 leeks, white parts only, thinly sliced
  • 3 shallots, finely chopped
  • 6 carrots, halved lengthwise and sliced
  • 2 celery stalks with leaves, sliced
  • 1 bay leaf
  • 1 tablespoon thyme leaves, chopped
  • 1/2 cup apple cider
  • 31/2 cups chicken stock, recipe follows
  • 2 tablespoons kosher salt
  • Dumplings, recipe follows

Directions

Combine the flour, salt, and pepper. Dredge the chicken in the seasoned flour.

In a large pot, heat some olive oil over medium high heat and sear the chicken in batches to avoid overcrowding the pan. When all the chicken is seared return it to the pot.

Heat some olive oil in a skillet over medium-high heat, and saute the leeks, shallots, carrots, and celery adding more oil as necessary. Add the sauteed vegetables, bay leaf, thyme, cider, chicken stock, and salt to the pot with the chicken. Bring to a boil, reduce the heat, cover and simmer for 10 to 15 minutes. Arrange the dumplings into 12 portions on top of the chicken in the pot. Cover and simmer for 12 minutes until the dumplings are plump and fully cooked.

Discard the bay leaf. Serve the stewed chicken with dumplings and juices from the pot.

Chicken Stock:

  • 5 pounds chicken bones, well rinsed
  • 20 cups cold water
  • 2 carrots, chopped (about 8 ounces)
  • 2 onions, chopped (about 1 pound)
  • 2 stalks celery, chopped (about 4 ounces)
  • 1 leek, sliced (about 4 ounces)
  • 3 sprigs fresh Italian parsley
  • 1 sprig fresh thyme
  • 2 bay leaves
  • 1 teaspoon whole black peppercorns
  • 3 cloves garlic, smashed

Preheat the oven to 350 degrees F.

Place the chicken bones on a baking sheet and roast for 40 minutes.

In a large stockpot place the roasted chicken bones and water. Over high heat bring to a boil. Skim the fat and foam from the surface of the water. Add the vegetables, herbs, peppercorns, and garlic. Reduce the heat to medium low and gently simmer for 4 hours. Strain the stock through a fine mesh strainer. Store in the refrigerator for 5 days or freeze.

Yield: 16 cups

Dumplings:

  • 11/2 cups flour
  • 1/2 cup cornmeal
  • 2 tablespoons chopped fresh dill, optional
  • 2 teaspoons baking powder
  • 1 teaspoon dry mustard
  • 3/4 teaspoon salt
  • 11/4 cups light cream

Sift together the flour, cornmeal, dill, if using, baking powder, mustard, and salt. Add the cream and mix until the dough just comes together.

    they have you make homemade chicken broth, otherwise it only takes 1 and a half hours, use store bought and you save time.

    Pretty good; I like the inclusion of leeks and apple cider. To the post that worried about cooking times: the extra time comes from the time to make the stock (since this cooks in stock and not water. Total cooking time for the chicken and dumplings themselves of 20-30 min. is correct, assuming you are using cut-up parts from fryer chickens (not stewing hens.

    Did you notice that the cooking time in the recipe "summary" says 5 hours? I think stewed chicken or chicken & dumplings are done in two hours, however the instructions say 15 minutes. That seam dangerous to me! This classic dish DOES need to simmer for a long time in order for it to be what it is--stewed chicken/chicken & dumplings!
