Cornbread Stuffed Meatloaf

Ingredients
  • Stuffing:
  • 2 large or 5 small corn muffins (2 to 3 cups), crumbled by hand
  • 1/2 pound bacon, chopped
  • 1 red bell pepper, diced
  • 1 tablespoon seeded and minced jalapeno
  • 2 tablespoons minced garlic
  • 2 tablespoons chopped fresh flat-leaf parsley
  • Salt and pepper
  • 1 egg, beaten
  • Meatloaf:
  • 3 tablespoons olive oil, plus 3 tablespoons
  • 1 cup diced red onion
  • 1 tablespoon seeded and minced jalapeno
  • 2 tablespoons minced garlic
  • 2 pounds ground beef
  • 1 pound ground pork
  • 2 teaspoons sea salt
  • 2 teaspoons freshly cracked black pepper
  • 2 tablespoons chopped parsley leaves
  • 1 tablespoon chopped thyme leaves
  • 1 teaspoon dry mustard
  • 1/4 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 2 eggs
  • 6 ounces sliced Cheddar
Directions

For the stuffing: Preheat oven to 275 to 300 degrees F.

Spread the cornbread crumbs on a sheet pan and let toast for about 20 minutes, or until lightly toasted and dry. Turn oven up to 350 degrees F.

In a skillet brown the bacon until crispy. Drain. To the same skillet add the red pepper, jalapeno, and garlic and cook until soft.

In a bowl, combine the cornbread crumbs, bacon, and vegetable mixture. Add parsley and salt and pepper, to taste. Add the egg and mix thoroughly.

For the meatloaf: In medium skillet over medium heat add oil, red onions, jalapeno and garlic. Cook until caramelized, remove from heat and let cool.

In a bowl combine the meat, salt, pepper, parsley, thyme, mustard, ketchup Worcestershire, and eggs and thoroughly mix.

Divide the meat mixture in half. Shape 1 half into a rectangle, creating a canoe, and then loosely fill with stuffing. Do not pack it in. Use the other half of the meat to fully enclose the stuffing. Transfer to the oven and bake for 1 1/2 hours, or until internal temperature reaches 145 degrees F. Layer the cheese slices on top and bake for another 5 minutes to melt the cheese. Remove from oven and let rest for about 10 minutes. Cut into thick slices and serve.

I finally read the reviews on this recipe and can't believe all the naysayers. I have made this four times now and am making it again today. This is without a doubt one of the worlds best meatloafs, juicy, super tasty and even looks incredible when sliced. I threw all this together easily. 'Intermediate'? How did they come to that classification? EASY. I had a job interview and its gotta cook for an hour and a half, so I figured I would assemble, squish, form, and pop in the oven before I go. Well, the interview went very well and I was gone for a minute more than the cook time, so I overcooked it. Still, my picky eater said 'its good anyway!' He was so right. Delicious! The best ever! I have made this three times now and it is very good, the stuffing is delicious in fact, but this takes alot of time to prepare, and has many different ingredients that are necessary. Compared to my regular meatloaf which is awesome and takes 1/2 the effort of this one, my family agrees that this is just nothing spectacular and definitely not worth all the extra time it takes to prepare. This is a fabalous dish! The cornbread stuffing really compliments the dish until no end. It mellows the stronger flavors and adds great texture. I also balances the moisture of the meatloaf. If you have had a greasy soggy meatloaf you will know exactly what I am talking about. Dont be affraid of the spice in the dish as it is very mellow when served and adds so much flavor in comparison to the traditional meatloaf. If you like spicer food substitute pepper jack cheese slices to the top. Many steps, a lot of ingredients, and bad advice. The stuffing was too dry, I shortened the cooking time by 1/2 hour and it was still too overcooked and fell apart at slicing. And the salt was too strong with the bacon. item not reviewed by moderator and published
I mostly watch the competitive shows on your network but more & more often you (Guy), have been catching my attention. Then i caught the episode of Guy's Big Bites with the cornbread meat loaf. YYYYYYYYYY the recipe was haunting me until I tried it. it seemed like it must be sooooooooooo GOOD! Well, today came & i went out & got all the ingredients & made 1. OMG!!!!! It was a hit. I was having some friends over for dinner who tend to eat out alot, so I wanted to make them some comfort food. Instead of plain old meatloaf, I tried this. It was a hit. Everyone loved the stuffing. Everyone had at least 2 pices each and the guys had 3! I was hesitant about the jalepenos making the dish too spicy. I was wrong, it was just right. I also used all hamburger when I made it. I found it to still be moist even without the ground pork. The meatloaf also came out looking very fancy especially when sliced. I was complimented all night on how great it tasted and looked. I searched this recipe simply because I had 1/2 a pan of leftover 3 cheese jalapeno corn bread. So this is what I used in place of the corn muffins. So, I only had ground turkey on hand, so I used that for the whole three pounds and since I am not a jalapeno fan - I substituted chipotle peppers. The turkey was okay - just not enough moisture for the long cooking time. The chipotles - which were in the stuffing, in the meat and in the topping cheese (yes, I love them that much!!) were perfect. Next time, and there will be a next time, I will use the recipes pork and beef mixture and I will decrease the cooking time - maybe 1 3/4 hours, check the temp and then add the cheese. item not reviewed by moderator and published

I do not usually care for meatloaf but my husband wanted to try this one and I am glad we did! It wasn't very hard to make, it took some steps but they weren't difficult, and it turned out delicious. It looks really fancy, and it had great flavor. Mine was also a little bit dry but I think next time I will lower the cooking time some (because it was definitely hot enough at the receipe time and temperature) and use hamburger that is not quite as lean. This was a delicious alternative to the average meatloaf. My husband and I both loved it and will definitely be making it again. Well, I LOVED the presentation by the Chef on the show, the meatloaf looked divine! The trouble for me was that the stuffing was too sweet. Between the cornbread and the red peppers, I was disappointed to bite into "MEATloaf" and taste sweet breading. I would almost make this again because of such a yummy look to the meatloaf but I am going to stick to traditional meatloaf when I go through the troubles of preparation. Made this meal for Father's Day (well, it was my idea anyway - my husband works in a restaurant and chops veggies MUCH better than I do). We used chorizo for the pork - fantastic flavor! We also used pepper jack slices instead of Cheddar which I think made it a bit "classier." The meatloaf slices look very nice and impressive. Add a baked potato and house salad and it looks like something you'd expect to pay almost 15 bucks for at a restaurant. We made just half a batch for the two of us. An extra step for us was making some cornbread first, but the extra pieces made for a good snack while waiting. I will make this again! Sorry, this one's no good. Although it looked beautiful and made a great presentation on the plate, the stuffing wicked the moisture out of the meat. So the end result was pretty lousy - dry tasteless meat - even with all those ingredients, and even having cut back on the baking time. My family had to load this up with ketchup to get it down. Perhaps moistening the stuffing with broth, and/or adding grated cheddar to the cornbread might improve this overall. This is a delicious meatloaf recipe! As Guy said on the show, I could just have eaten the cornbread stuffing for my dinner! Love this recipe, but i did a few changes to make it more healthier and less fat. I just omit the bacon and used cornbread stuffing mix for the stuffing. Next time il use 2 boxes cause I'd like to have more stuffing in it. Then with the meatloaf I used vegetable medley mix and stir fried it with the onions and peppers before adding to the mix. My husband and I LOVE meatloaf, so when a colleague recommended this recipe to me I was very excited. The prep was rather involved, but that was mainy due to the stuffing. I have to say that I was somewhat disappointed. The stuffing was great, but the meatloaf was horrible! It was dry and the seasonings made it taste funny; my husband compared the flavor to that of a sausage (which I hate!). I agree with many other reviewers, the end result was not worth amount of prep! I love this recipe. It's much easier to put together than I thought it would be. I usually make a couple of alterations like making a much smaller meatloaf with just 1 lb of ground beef (and make 1/3 of the recipe). Super-easy, extrmemly good. This is a recipe I will use over and over, and one that I will share (eventually!). I would like to comment on a previous poster stating "recipes are extremely unhealthy" and another poster stating "meatloaf made with corn muffins?!" I have two comments: (1) Many of the recipes we see on ANY cooking show rather it be cakes, casseroles, meat, etc., are/can be unhealthy if eaten in unhealthy portions. Portion control is how I maintain my weight and am able to eat anything I want and am rather slender. (2) This is one reason those who love to cook and bake love the cooking shows. In order not to be dry, meatloaf needs some crumbs (maybe half a cup of find cornbread crumbs or just plain white bread or cracker crumbs).
