    I found this to be very bland. The ricotta cheese, combined with the mealiness of the cornmeal, was very mushy. I also can't think of anyway I could have changed this to make it better, although maybe cream cheese would have been better than ricotta (less mushy.

    My 8 yr old daughter is an aspiring cook and decided she wanted to try these. We made them and the family loved them. We will definitely serve these again.

    I have an idea to mix the ricotta w/ a little powdered sugar or use marscapone, top w/ strawberry and drizzle w/ maple syrup that has been heated w/ butter and vanilla, this is how I make my pancake syrup when we have pancakes its a huge hit and sooo delicous. Or you could drizzle q/ gran marnier for a more adult treat.

    I thought these were a little off, but my girlfriends all died over them at our dinner party last night. I had a lot of trouble with the blinis. I know everyone's stoves are different, but medium was entirely too high - they were scorched and had a weird texture. I ruined the whole first batch of mix and it took me until maybe the last 5 blinis of the second batch to get them sort of decent! And that was taking the temp down to low instead of medium. The photo of them shows more of a pancake texture and color, but mine were much more like crispy cornbread muffins. I saved the best ones out and topped them with a ricotta/honey mixture, a raspberry and then drizzled with honey. Like I said, girlfriends loved them anyway!

    These were a huge hit at my labor day party today. They were really easy and everyone loved them!! There are many things you could do to alter the recipe, but they were perfect just they way they are.

    This were so easy to make, but wowed everyone at my party. I used whole milk ricotta after smoothing it out in the food processor and cherries instead of grapes, since I had those already in the fridge (and left out the honey. I would recommend to let the blini cool just a bit so your cheese doesn't melt off.

    this was pretty good ..i followed the receipe the first time, but when we make it again, i will substitute the riccotta for cream cheese mixed with powdered sugar and top strawberries, blueberries, etc sfor more color and different flavors. My 5 year old loved them!
