I am so glad I found this online. I winged it from watching it breifly on the show and picked up the ingredients. Glad I found it and gonna try it tonight with some roast pork. However I am going to also add crumbled boiled eggs to give it more body. Might even throw in some croutons at the very end as well. This has to be a "can't miss" recipe. What's not to like about any of the ingredients.

This is really the only way I like spinach prepared. I didn't need to do anything to this recipe. Don't forget to add some butter to this like Paula did. Butter makes everything better. This is my go to spinach dish.

Excellent recipe. I love spinach - this recipe is the one of my favorites. Original Corrie's Bacon Creamed Spinach does not contain butter, as Jaimie explained. And he added the butter because Paula wanted to add it to it, since she likes butter in everyting. That is why it wasn't menitoned here.

I substituted turkey bacon for the regular bacon and fat free half and half instead of the heavy cream. It turned out great!
