I made this per the recipe and served it topped with chicken kabobs, it is a very light spring/summer dish and very healthy, with recipes like this I don't mind being in the kitchen.
It was great, but I had to doctor it a little by adding more cinnamon, salt, and sugar. I really didn't like the raw onion in this dish, but as with salsa, the taste was way better the next day. So next time I will try to marinate the veggies in the oil first or sweating them.
I didn't add the whole cucumber, but I will next time.
Love this salad! I left out the red onion and just used the green as I am not a big raw onion fan. I added halved grape tomatoes and some feta. So good and refreshing on a hot day!
This is the tastiest couscous I have ever had....even my kids aged 10 & 14 liked it! The cinnamon gives it such a cool and unique flavor....I doubled it to share with friends too!
This is a great recipe. It's easy to make, healthful, and has great flavor. We use twice the amount of lemon juice since we love the taste. This is great as a side dish or a light lunch. Surprisingly, it makes great left-overs as well. If you don't think you will like couscous, try it - you may be surprised!
I love this couscous salad. Everytime I make it, it's like we can't stop eating. It is delicious!
I wanted to try a different side dish for our BBQ (chicken thighs and ribs), and I prepared this salad. Everybody loved it, it's so easy and fast to make, and it goes great with chicken on a hot summer day! The cucumber is refreshing and it's light- and the salad is great the way it is, no need to replace or add anything! Delicious!
The cinnamon makes this so interesting.
Made this to go along with a seafood dish and it turned out to be great! The cinnamon adds subtle flaver will the lemon & cilantro knock it home.
I followed the recipe but replaced with vegetable stock to keep it vegetarian.
Never been a fan of this kind of stuff but now will make it on a regular basis for the family. I don't need a nutritional analysis to tell me that this is very healthy.

The reviewer who gave this a bad mark probably just came off a Burger King binge.
This was so easy and the seasonings were perfect. I did not have all the vegies when I made it and had tons of tomatoes from my garden, so I made mine simple. I also used parsley instead of cilantro, it was fine for what I put in it. I put half of the cinnamon in because I was not sure how that was going to taste. It was very good so I will probably use the full amount next time. Try it, goes great with any chicken as a side dish and it's really fast , you can't beat those kind of recipes.
I've never had couscous this bad. My boyfriend and I couldn't choke it down and threw the whole thing out. The cinnamon and onions particularly ruined this recipe.
I wasn't really sure whether I would like this salad or not but after trying it I think it's excellent. This is definately a keeper.
I've made this a couple of times now for friends, and when I asked what people who like for the next time I had people over, this was requested again. Wonderful flavors, simple, and very good.
I made this for a block party and it was a big hit!
This was my first time makeing couscous and it came out great! I also found substituteing mint for cilantro was great as well.

I made this salad for a picnic and it was a big success.
Nice taste with the cinnamon and cilantro !
This recipe was so easy to make and came out really well. I made a few substitutions, which I really enjoyed. I didn't add cinnamon or cilantro (my family doesn't like those foods) and I sauteed the red onion and peppers before adding them in. I also added corn in. I totally recommend this recipe!
I loved this pilaf, served warm or cool. The lemon juice and crisp vegetables really make it. Pretty easy to make.
My husband Bob and I (Deby) decided to have couscous salad with our Kabobs instead of ham this Easter. It was our first time making couscous, this is some of the best flavor combinations I've tried in a long time. I love to cook and since we have started watching the food network Bob helps in the kitchen and we love the ideas we get. thank you for a wonderful and fun receipe.
I added just a little less cinnamon, than called for but tastes very fresh and light. Great for summer picnics.
I've made this 3 times now, and it seems to go everything. Once was with the lamb kebob which is also excellent, once on a light picnic with fried chicken, and I brought it to a barbeque and got rave reviews. Very easy to prepare and keeps well.
