    I had this with rack of lamb and it was a great combination. The currants and pine nuts added a nice touch. My fiance said that I should have added more pine nuts and currants. Maybe next time or I may even sub the currants with dried cranberries.

    I really liked this, however when I make it again I will add a bit more pine nuts and currants. Other than that, it was pretty doggone tasty!

    Totally yummy; totally easy. Brought it to a Moroccan dinner, and it paired perfectly with the Spiced Lamb Taurine . Rave reviews.

    this couscous was amazing! very similar to a Mediterranean couscous ive made with apricots and scallions. due to the fact that pine nuts are soooo expensive i used a packet of near east toasted pine nut and just added some more couscous because theres only a cup of couscous in the packet. i also garnished with cashews to get that crunch. raisins would be great with this instead of currants as well. thanks Ina!! definitely a go to side when you dont know what to make :-

    i made this as a dish for a large buffet spread.
    didn't have any currants so i used craisins. it was great

    you could also subtitute chopped apricots and
    slivered almonds. easy and inexpensive as a side for feeding
    a family or a crowd.

    Make the recipe to the letter and you will have a hit on your hands. I make this a lot for parties...perfect, especially since it can be served at room temperature. People that I have had over for dinner who said they do not like couscous have asked for the recipe. The currants are perfect in this.
