Any time we get invited to a pot luck my friends always want me to make my ceviche but it's so time consuming. When I saw Robin make this and saw how easy it was I knew I had to try it. WOW, I can tell you I have found a replacement for my old recipe. This one is so flavor packed and easy to make. This is must to try if you like ceviche. I forgot the bread at the store so we used wheat crackers instead and it was fabulous.

I really like this recipe. Here is a tip. When you rub the garlic cloves on your bruschetta, like Chef Robin Miller says, use a garlicboss. It adds just the right amount of garlic flavor. Its the perfect tool for the job, and an excellent summertime recipe.
