I WAS WORRIED THAT THESE MIGHT BE DRY, BUT NOT AT ALL, SO NICE TO USE SOME OF MY LEFTOVERS FROM THANKSGIVING, I USED MY SWEET POTAOES INSTEAD OF THE CARROTS, SO VERY GOOD.

What a great way to use leftovers. I, too, used leftover sweet potatoes (ran out so I also used some carrot puree and the cranberry sauce. I swapped 1/2 c of white flour for whole wheat....added a little orange juice when I was pureeing. These are really good...not too sweet. Add nuts if you like....

I also used leftover mashed sweet potatoes in place pf the carrot puree. The sweetness of the muffins played nicely with the texture and tartness of the cranberries. We loved 'em!

Substituted leftover sweet potato casserole (including the pecan topping for the carrots and it turned out great! We always seem to have cranberry sauce and sweet potato casserole leftover and this is a good way to use them!
