    The soup was flavorful beyond words. Every single mouthful was delicious. Mint can be extremely overpowering but not so in this dish. It was very mild and hit the spot. I will probably saute 4 or 5 tomatoes as opposed to the suggested 3 to give it more of that texture. Outstanding from start to finish. Will make over and over!
