Great recipe especially for entertaining. I of course make traditional empanadas with meat, but when having alot of people I would do it with seasoned cheese. This is soo much better. To Annette: try the freezer section and look for the ethnic section. They are called cubanitas. There are a few brands but Goya makes them too and they are the most popular. Most stores wont have the red ones so buy the achiote seeds (I like badai from the grocery store in the ethnic spice section. I put them in a little pot with oil and heat for about 5 minutes on medium high and the oil will be colored and flavored. I then fry my empanadas in this oil. Or, you could sprinke a packet of Sazon Con Achiote (also from the ethnic spice section in grocery store on top of the dough and then fry. I dont put as much oil in the pan as Daisy. I put enough to cover bottom half and then flip.

Hi Daisy,
We love your shows and was glad to see you on the Food Network.
I have been searching for a recipe for the dough, all I've found is dough that has shortening in it like a pie crust. Since we will be frying them is there a dough that doesn't need shortening? Actually, my mother in-law (deceased who is from Hawaii but of Puerto Rican desent made panadejah's (spellling? fried pie's filled with meat she would make her pastelle's with. Yum. I could never get her to reveal her dough. I know she had used baking powder in the mix and the end product was a thin crispy dough. HELP! I live in Poulsbo, WA and cannot find premade empanada dough rounds in any markets.
I haven't tried these yet because I need the dough. But, I know they are 5 star just by reading the recipe! =

I made these for a brunch this past weekend and they were delicious! The creamy corn was the perfect subsistency to go into the empanada..not too liquidy, just thick and creamy. My family gobbled them up!

Wow,reading all your comments are exactly what I mean. We need more of Daisy on T.V. I could never catch Viva Daisy air time, and iam saddened. I know theres ways and gadgets that could allow me to record the show. Thats not good enough. Daisy needs to be on Daily. Television shows have never impacted me the way Daisy show did when I saw her on PBS. I saw Daisy cooking and I saw every influential women in my household growing up, and now with my wife, i love that. The food, the spirit, and the smell. I could just go on and on..... UM Um Um, Delicious's .

I have not tried this recipe yet but I'm going to this weekend. I love Spanish food and Daisy's show gives me the tools to try and cook it. I'm going to buy some cilantro because she's always talking about it! I just want to say that I'm sooo glad she is on the food network and I hope her show continues. I love her! I used to watch her on one of the local channels here in NJ but could never figure out the regular time she came on so it was hit and miss. I couldn't find where else I could submit my comments about the show in general so I figured I'd post it on a review. I will have to post a real review of the empanadas after I cook them!

Daisy, I love empanadas. I am a gringo but I grew up in Chile when I was small where the empanadas are even better than the argentino ones. In fact, los chilenos hacen una empanada de horno con pino de carne y con paprika tambien. I miss those empanadas so much and the argentino ones you made on your show also look delicious. Where can my family find the masa or dough for the empanadas because in Chile that was the key to the whole thing? I am homesick for empanadas de horno y de queso (fritas tambien and my wife has tried so many masas and they are just not the same as what I had in Chile. I do not tell her that though because I do not want her feelings to get hurt. I love that she tries.
Also, in Chile they made humitas de maiz wrapped in corn husks and steamed and they are incredible. They make an ensalada chilena de tomates, cebollas, limon, aceite, parsley (pardon my spanglish que me estoy poniendo viejito y se me olvida algunas de las palabras en espanol. Any help you could give me on the masa would be greatly appreciated. I love your show and your personality and my father in law and I watch your show religiously and we even try some of the recipes. Your the best.. Thanks, Jeff Smith

This recipe of Daisy's is wonderful made already this morning for Lunch ...watched her cooking show which I LOVE every Saturday she is WONDERFUL in her kitchen makes you feel like your her Best friend in her home - she is very down to earth and wonderfully natural - LOVE hearing her speak about her Family and her past with her Husband and Grandma in Puerto Rico ... You GO Ms Daisy we root for you her in New Mexico ... Land of Enchantment !
