Ingredients
  • 6 ounces pepperoni, thinly sliced
Directions

Preheat the oven to 425 degrees F.

Lay the pepperoni slices in a single layer on a baking sheet and bake for 8 to 10 minutes.

Remove the pan from the oven and soak up the excess grease by pressing paper towels against the pepperoni chips. Return the pan to the oven and bake an additional 2 to 4 minutes, until the pepperoni slices are very crispy.

Serve as a snack anytime or use in place of crackers for dipping or for topping with your favorite cheese! They'll stay fresh and crispy for 1 to 2 days if you store them in an airtight container.

Good, but I have a lot of the same comments that others have. At 8 minutes, these are a little overdone for me, much less adding additional time. They do end up spicier after baking and are a little overwhelming. I too think that salami may be a good substitution, but it may need cutting into quarters to get crispy. The microwave method of cooking these is absolutely the way to go! I sandwich 20 slices between (alot of) paper towels and pop them in the microwave for 1:45...and presto! Perfectly crisped every time. I shared these with the girls at work and now we have a constant stash of pepperoni and paper towels! Instead of using the oven, I put a couple paper towels on a plate with the pepperoni on top and put them in the microwave for about a minute and a half. This is a great idea for a high protein snack. please don't be negative because you can't judge your oven or your cooking abilities. cook at 450F for 5 min. on each side and you will get a wonderful high protein snack that no one else thought of. I do not use parchment paper, but rather a large cookie pan covered with aluminum foil and then a raised grating. The aluminum makes it easy to collect the grease and the raised grill allows the fat to drip off. After cooking for 5 minutes, I remove the pan and turn over all the pepperoni slices and then dap with a paper towel to get more grease off. It then goes back into the over for 1 to 2 minutes. I have started with a temperature of 325 degrees and they are crispy, but not as crispy as I would like. The am presently adjusting the temperature upwards. The main difficulty is that the pepperoni slices are not all uniform and some cook quicker than others. I will try to put the thinest slices all in the same oven run. I do about 60 slices in batches of 15 at a time. This saves a lot of clean up and I keep the crispy pepperoni in the refrigerator and use them for snacks and in slices for salads. It is a great recipe and very satisfying. They do not last long when my son comes home. item not reviewed by moderator and published

What a great idea! I buy pepperoni slices in bulk from costco to snack on when we are doing low carb, this was a great way to change them up a bit. Basically, these are taste good. My first batch burned black really bad at 8 minutes. My house was filled with smoke and smelled bad. I had to open the doors and windows (it is Feb). The 2nd batch I did for 4 minutes and kept an eye on it and the middles were still reddish and the outer edges were burnt. The 3rd batch I did 6 minute and again almost smoked up the house again. The husband said stop wasting the pepperoni. So, I like the crispness but need to figure on a lesser temp and shorter time.
