Combine the coconut milk, chia seeds, agave nectar, flaxseeds, hemp seeds and vanilla in a medium bowl, and let sit for 10 minutes, whisking every couple of minutes. The mixture will start to set like gelatin. Place some fruit in a parfait glass, add the milk mixture and let sit in the refrigerator overnight. Top with granola, raw oats, nuts or honey.
