    Amazing recipe! And so easy! I might try upping the amount of rice to 2/3 cup next time to make the onion/rice blend even creamier. I can't stress how much the fresh squeezed lemon and chopped mint at the end make this dish!

    I've made this soup several times, and it has become a family favorite. Even my picky children ask me to make it. The dill adds a nice touch, and dried works well if your out of fresh.

    Addicting, and great on a cold night (or any night for that matter. I also like to add celery to this. Make sure to add lemon, really helps bring out the flavors.

    I chose this recipe, because I was looking for somewhere to use brown rice. I want to eat more of it for health reasons, but I absolutely cannot stand the taste. To me, brown rice tastes like chewing on a washcloth. (don't judge. you were little once But in the end, I chickened out, and made this recipe exactly as written. I would add more carrots next time, but otherwise I wouldn't change a thing. Curry powder is becoming my new favorite spice. If anyone out there ever makes this soup with brown rice, please review it here. I would love to know how it comes out.

    Yum! Big hit! We added more carrots but would have been happy with more. We prefer to eat less meat so next time I'll use less chicken. I bought Naan bread and used that for dipping. Even our 9 yo liked it although she did not like the dill taste as much.
    I wish I would have read the recipe more carefully before I was starting to make...I had to post pone making it until I ordered an immersion blender-thank you Amazon. Will certainly make again!

    This was really wonderful. Used a rotisserie chicken to cut some of the prep time. Next time I'll add more veggies. Yum!

    Do NOT skip the mint, dill or lemon, people!! And dried herbs are OK but never the best. The only change I make is to buy a rotisserie chicken so I can just shred the yummy white meat and save time by not poaching chicken breasts. Also, I add red hot pepper flakes because I like everything spicy. Get a yummy loaf of French bread and dip-away!! Best soup ever. If your kids are scared of veggies, puree the carrots as well. They'll get the added nutrients and never know it :

    This soup was absolutely delicious! Perfect for lunch or dinner in the winter, so satisfying. I made a few changes which I thought improved the recipe and made it easier to make. I used a package of Uncle Ben's 90 minute jasmine rice, as I did not want to buy an entire jar of jasmine rice for $8 that I would never use. Because the rice is already cooked, I cut the chicken broth down to 4 cups. I just heated 1/3 cup of the rice in the broth for a few minutes and then blended. At the end, I added the rest of the bag of rice to the soup because I do think it needed something more in it - seemed a little "empty". Will definitely make again and experiment with adding some more veggies, like cauliflower.

    This soup was absolutely AMAZING! We added celery and used dry dill and yum! We make this all the time now!
