    I made this recipe tonight. My sixteen year old daughter tried it and started eating the peas before they were all the way done. They were so good we could not stop eating them! The recipe was so easy and simple. I can not get over how good it was! Oh one note, I did use chicken broth instead of just water.

    I only used 1 cup or half of a one pound bag of black eyed peas that I soaked overnight. I did not have a bell pepper, but I did have a jalapeno pepper that I seeded and finely chopped. I sauted one chopped onion and the jalapeno pepper in 2 1/2 tablespoons of butter. I added the soaked black eyed peas and two cups of water and cooked covered on low heat for 40 minutes and then uncovered and cooked for 20 minutes more, stirring occasionally. I will be making blacked eyed peas like this again.

    i have always been afraid to make black eyed peas because my grandmother's and my best friend's mom's were so so good! thanks to this recipe, i will never be afraid of black eyed peas again! they were tasty and melt in your mouth tender. i didn't need to soak them overnight; i just pour boiling hot water over them and covered them for about 4 hours before i put them on. i had to. i live in a place where black eyed peas are at a premium. i couldn't find them until the day i wanted to make them.

    This is the first time I am making black eyed peas and they came out really good. They definitely do not need that long cooking, I think the pre-soaking helps them get soft. I found them a little sweet so I added some aji (small red Hispanic pepper and it just brought it to a different level. Sweet, spicy and yummy! :

    First time making black eyed peas and they were very good. I agree with the first reviewer you may not need the entire sixty minutes on a gas stove top.

    Had some peas in the cupboard I wanted to use up, and found this recipe. Really basic comfort food here- may not need the full 50-60 minutes ( especially if you have a gas stove-top. Served them with blackended salmon and steamed broccoli. They were yummy! Would make again- nice replacement instead of potatoes or rice.
