Ingredients
- 2 cups yogurt
- 1 cucumber, peeled, seeded and chopped
- 1 shallot, minced
- 1 tablespoon parsley, minced
- 1 tablespoon finely chopped mint
- 1/2 teaspoon cumin, ground
- 1 tablespoon olive oil
- 1 large pinch salt
- Ground white pepper, to taste
Directions
Drain the yogurt in a cheesecloth-lined strainer set over a bowl for 1 hour.
In a bowl, combine all ingredients. Serve as a salad dressing or as an accompaniment with spicy foods, such as vegetable curry.
