Ingredients
- 2 cups cornmeal
- 1 cup buttermilk
- 1 cup water
- 1 large egg
- 6 tablespoon vegetable oil
Directions
Preheat the oven to 375 degrees F. In a mixing bowl, combine all of the ingredients and mix well. On the stove top, heat the oil in a large skillet until hot but not boiling. Pour the hot oil into the bowl with the other ingredients and mix well. Pour the batter into the skillet and bake for 35 to 50 minutes. Start checking for doneness after 35 minutes; it should be golden brown when done.

After reading the ingredients, what seems to be missing is some type of rising agent that probably would improve the texture and the taste of this recipe. I will be using baking powder to achieve this. Maybe the author of the recipe left this vital ingredient out by mistake. Otherwise, you'll be making hockey pucks for sure!!

I thought this was very easy to make, but I would not make it again. my family did not enjoy it, there wasn't much flavor to it. It was better the next day toasted w/jam.
