Ingredients

For Filling:

  • 8 cups fresh sliced peaches (free stone peaches)
  • 2 tablespoons fresh lemon juice
  • 1/4 cup sugar
  • 2 teaspoons flour

Topping:

Directions

Preheat oven to 350 degrees F.

Combine all of the filling ingredients in a large bowl and gently mix.

Pour the filling ingredients into a 9 by13-inch baking pan and set aside while making the topping.

In a bowl combine the flour, sugar, baking powder, baking soda, cinnamon and nutmeg. Cut in the butter until the mixture resembles large peas. Stir in the egg. Distribute the topping evenly over the peaches in the baking pan. Bake for 40 minutes.

    I made this today but made it with apples as peaches are no longer in season.( frozen peaches just dont get it, at least for me. The only thing I did different is cook the apples in heavy saucepan for about 10 minutes and added a little heavy cream. It comes out almost like a caramel sauce and the apples are nice and softened. I loved the crust, Its a nice change to the usual crumb topping and I think I will use it in all crisp recipes from now on. (Why wouldn't it be good with almost a half lb of butter in it! I had to double check to see if it was a Paula Dean recipe for a minute!! I will definately make this again and recommend you try it if you are a crisp fan,,Delicious.

    This is my go-to summer dessert. We'll serve it warm with vanilla ice cream or frozen yogurt and it's always a big hit. Add a little more cinnamon and nutmeg to your taste and even more fruit, it doesn't hurt the recipe. When fresh blueberries are in season, I'll toss in a couple of handfuls ? yum!!!

    My son loves peach dessert and after I made this he told me it was A KEEPER! Actually all 3 of my childre, 21, 16 & 11 LOVED it! I think it would be best to beat the egg before mixing it in - if using one at all. Add a little more cinnamon & nutmeg too! Bet it would be great with apples!
