Ingredients

  • 1 1/2 to 2 cups basil leaves
  • 1 1/2 to 2 cups collard greens
  • 3 cloves garlic
  • 2 ounces parsley
  • 3/4 cup olive oil
  • 1 cup grated Italian cheese
  • Salt and pepper to taste

Directions

In a food processor, chop first four ingredients. To this mixture, add olive oil, cheese, salt and pepper. Mix and serve.

    I followed a recipe that was on epicurious and is much more flavorful. Collards should be cooked a little before processing,... but the recipe I used also adds green olives to the mix for flavor. With the strength of the flavor in collards I found the olives to be a nice contrast.Read more
