This simple recipe takes zucchini to a whole new level----EXCELLENT! I shredded my zucchini, not sliced, and left green skin on. My guests loved it and so do I and I'm not very fond of the vegetable...you must try this!

Awesome! I too was looking for something different to do with zucchini and came upon this recipe - I was initially hesitant b/c I did not think the ingredients would work, but they did, and how. Plus, I had leftover fresh cilantro and feta on hand -- I did have to substitute dried basil and was a little worried but it worked fine. Husband who usually is not a big feta cheese person, ate every bite [there's your sign]. Great way to rachet up zucchini for a quick and easy change of pace -- can't wait for the farmer's markets to open this summer and get fresh from the farm zucchini and herbs and make this again and again. Really, try it. Very, very good. Quick, easy and delicious. This recipe -- a keeper, friends.

Very delicious! I was looking for something different to make with feta cheese and zucchini and this recipe was a great surprise! Very easy to prepare! Decision to use basil or parsley? I split the difference and I used both . . .

We love Greek food. This recipe sounded easy enough to do, so we tried it. We probably added a touch too much basil, but the flavor far surpassed any expectations we had. An excellent, easy to do dish. We'll be making this for guests real soon.
