- 1 ounce Plymouth gin
- 1 ounce Absolut Apeach
- 1 ounce Cointreau
- 1/2 ounce fresh squeezed lemon juice
- 3 to 4 pieces of pineapple, muddled
- Splash of Pinot Noir
- Lemon wheel for garnish
Start with sliced pineapple in a mixing tin. Add lemon juice and muddle. Add the liquors and ice. Shake and strain into a martini glass. Top with a Pinot Noir floater and garnish with a lemon wheel.
