    I found this recipe when I received Diakon Radishes in my CSA shipment. I had never used Diakon before. The recipe was excellent! My children loved it as well!

    This was surprisingly good with minimal fuss. Don't skip the soaking in salt water step as daikon can be fairly bitter without it. I have a few vegan friends and I will make this for them next time they are over. Very good and very easy.

    I made this twice, once following the recipe exactly and once with a premade pasta sauce. It wasn't bad, just not my preferred way to enjoy daikon radishes. Probably something I would only make when I need an emergency dinner fix.

    I found this recipe when my vegetable shipment was modified to include daikon. I had never even heard of it before and didn't know how to prepare it. This recipe was quite filling with the daikon as the "pasta" and the tomato-basil sauce is perfect when married with the earthy flavor of the daikon. We modified it by omitting sugar, adding shrimp and sprinkling with cheese but it was delightful. I would recommend this to anyone that is trying this vegetable for the first time who likes italian type food. I will probably make it again sometime.
