1, The trick to not having mushy rice is to make sure that the water (or broth cooks down to the level of the rice. I personally was taught to stir the rice once only, pat lightly so it's even all the way around, and cover the pot, and lower the flame. Usually takes 17 minutes and it's cooked perfectly. Promise.
2. Annato (Achiote is a beautiful thing. If you can't find it, you can do without it, but saffron has a completely different taste. I agree with another reviewer to use Sazon con Achiote -- it's a powder and similar, but nowhere near as good.
3. I've never made it with chicken brother, by my Cuban stemother makes it with a can of beer and you don't taste the beer (I'm not a fan of beer but it gives the chicken and rice an amazing flavor. I will, however, try the chicken broth.
4 The only thing I' held out on is the cloves - maybe its a Dominican thing?

Where's Daisy? Is her show off the air? I've watched her when she was on regular TV and was thrilled when she came to the Food Network but her show is no longer on. Please bring her back! I miss her!!!

I learned how to make Arroz con Pollo when I was a little girl watching my mom and aunt in the kitchen. When I watched Daisy make this recipe it reminded me of my childhood. Daisy's was refreshing to watch and her recipe tasted- almost like mom's:

Great, just like my grandma made it! Bones can be removed after cooking, before adding it back to the rice!

I have been trying to locate Daisy on Foodnetwork, but have not located her.
I love not only watching her cook on PBS but her great personality wants you to run to the kitchen and cook.

When I saw this recipe being made I knew if I could perfect this, this would be one of those dishes I'd be known for. I want to find something I can really make my own in my family... I think this could be it.

My favorite thing about Daisy's recipes is that she is teaching me to cook like my grandma. It's a beautful thing.... this turned out sssooo authentic and delicious.
Some of the recipes I've tried in the past have been "updated" with really bad results.
I have to give huge thanks to Daisy. To me, her cooking lessons are incredibly valuable.
