So great to see a BORICUA cooking with authentic ingredients when that sofrito hits the pan it brings me back to my grandmother's kitchen! Congrats and wish you great success....now make some arroz con gandules and pernil!!

I was wondering if this recipe is going to air again, because if I remember correctly she added capers to the olive mixture?

This is a delicious recipe that is easy to make. I watched Daisy make it on the show, and that helped my preparations. The only substitute I made was using ground turmeric for color instead of achiote, because I could not find annatto seeds. The Sofrito is worth the time to make - I've frozen the remaining 3.5 cups in three separate zip lock bags and so am ready for the next time I prepare this recipe, or to use it in another dish such as I might use a chopped onion/carrot/celery combination. The printed recipe doesn't mention the chopped capers Daisy used on the TV segment - I included those with the olives, and it made a great combination. Also, on the show, Daisy sprinkled baby frozen peas on the rice about 5 mintues before she thought the rice would be tender. I loved the color this brought to the dish. (Next time I'll try it with the roasted red pepper the recipe calls for, but was not in the show. Also, the next time I make this dish, I'm going to use a cup of Sofrito and cut the rice back to 2-3 cups, as I needed more broth than the recipe called for and I think I ended up with too much rice. (Although it was delicious and so had no problem eating the "extra"! In reading other reviews, I want to say thank you for the idea of using Goya Sazon as a seasoning (with achiote.

I should have known from the beginning that 4 cups of broth to 4 cups of rice would not be enough, still I followed the recipe as written. Sure enough, the rice did not cook evenly and I ended up adding an extra 4 cups of broth. Regardless, the dish is tasty. Next time I will add 8 cups of broth to the 4 cups of broth. Now does anyone know how I can use the extra 3 1/2 cups of sofrito I have left?

I absolutely loved the chicken in this recipe very moist! The rice was good, however I did not have the Olives and Capers on hand and think the dish missed thier yummy saltiness. I will make Next time and make sure I have those two ingrediants! Homeade Sofrito is the way to go!!! Glad to see you on FoodNetwork Daisy, I'm a big fan of your cooking.
