Daisy, I saw your recipe for chicken with rice on TV and went right to Food Network to print it but I can't. The site redirects me to another page and I can't seem to view this recipe. I could view your other recipes just not this one. Help!

This is a great recipe...I am of Puerto Rican descent and have made it all my life but the addition of achiote oil is fantastic...It has enhanced the flavor of the rice and chicken...Keep it up Daisy!!

This is the best Arroz Con Pollo ever! So much more flavor than the other recipes I've tried. The secret is in the sofrito and the achiote. I didn't make the annato oil, I just used 2 packages of Goya Sazon, which is a corriander and achiote seasoning. Achiote comes from the annato seed. I browned the chicken in oil, then removed it. I then added my sofrito along with the olive mixture and then sprinkled the seasoning in and proceeded with the recipe. Also, the 4 cups of rice to 4 cups of broth is too much rice. I only used two cups of rice and it was perfect. Try this recipe, it won't disappoint you. YUM!

I have always wondered about Sofrito but never knew what it was called. Thank you so much. This recipe seems like a daunting task but actually turned our great. Had to go to the farmers market for the ingredients for the oil...but well worth the trip. I now have Sofrito made and saved for other recipes this week.

RUN - Do not walk to the market ... and do not skimp out of one single ingredient! The layers of flavor are sophisticated and complex. They meld together to perfection! Most definitely the next recipe I will use for entertaining! MORE Viva Daisy!

My husband and I really loved this dish. It took longer for me to make than the recipe stated (but many of the dishes on Food Network do. When I actually watched Daisy create the dish on the show I thought she used 1 cup of the safrito sauce. (I did too and I'm glad I did. Also, instead of roasted red peppers, she put peas in the dish at the very end. This one is a keeper and I'm going to add it to my monthly menu, along with Ina's Mexican Chicken soup.
