    You can make flour from the grain it comes from. Uncooked oatmeal in a blender makes oat flour, Tapioca uncooked in a blender, tapioca flour. Also Cornstarch is a substitute for Arrowroot or tapioca. I make do with what I have. If you have questions, look for answers on google.
    Loved these cookies. Make them with choc chips.

    I made the cookies and dredged them in the cocoa & confectioner's sugar combo. Just delicious! Re tapioca flour...it is easily available on-line at sites like MySpiceSage.com. It comes in one pound packages and lasts forever, plus it's cheap! I've found buying spices and arcane products on-line results in much fresher products and Penzeys.com has the best spices and best prices anywhere. I can buy one pound of dry mustard for the price of one small can of it in a grocery store!

    I am not sure where in the midwest you live, but the HyVee carries tapioca flour.

    you could use either arrowroot or cornstarch in place of the tapioca... I live in a small town too, and sometimes you need to sub ingredients, not going to drive an hour for one thing to try a cookie recipe.

    by the way, I hate that i have to put a rating on this recipe without trying it just to reply to Rose Marie... I have not tried the recipe so please ignore my rating..

    I would love to try some of the cookie recipes they have put out like this one but I am from the Mid-West and it is almost impossible to find some of the ingredients like the tapioca flour in this recipe. I even checked with our local health food store to see if they carried it and they never heard of it. I wish the Food Network would put out recipes with basic ingredients so we can all try making the cookies.
