This was a big hit! I added a finely diced serrano pepper and used green apple instead of jicama. I served it with pork carnitas tacos and plantains (sauteed w/sea salt and lime. YUM!

Loved this but i used 2 mangos as I love mangos. I have made it with both jicama and apples - both are good

I just made this salad and it is really good. I added some diced red pepper and substituted a little lemon juice for some of the vinegar. I will be taking this to the next bbq I'm invited to!

The favors worked perfectly together and it tasted perfect with a margarita. I substituted a green apple for the jicama and it was just as good.

There's nothing about this recipe that I don't love. It's easy, it's healthy, and it tastes great. I've made this a few times, for a pot luck and for a nice side dish for grilling. It's a great way to incorporate in-season fruit like mango into your diet.

I loved the combination of the black beans, mango, and jicama. I was craving a citrus taste, so I added a little lime juice, lemon juice, and orange juice/zest to the dressing and decreased the vinegar to only 1 tbsp .... I thought the citrus brightened the dressing. I almost ate the whole dish for lunch, it was so satisfying!!! I think I'll try apple in place of the jicama next time. I love the flexibility of this recipe too.

I made this for dinner as a side to grilled steak- Incredible. The next morning we had some with a savory omelet. Wild complements from my husband. Thanks again Daisy. You are the best!
