    I LOVE this recipe it is one of the best of the best! I used 3 lemons and like 4 limes. And it tasted good too. And instead of regular tortilla chips i used the tostitos lime chips it was even better! This is a very good recipe!

    We loved it, very light and cool on a hot summer day. I like a shrimp ceviche over one with fish. Very tasty and perfect for today. We'll be having this again!

    Dear Alinda your observation is correct. Ceviche is the correct one.
    Here is a brief variation of this recipe, with the Xni-Pec salsa as is -habanero chile-

    Ceviche Xni-Pec -Featured at -Chicago Tonight channel 11 & CHECK PLEASE!!

    Ingredients:
    1 chiles habanero or more to taste, diced
    1 red onion, diced
    3 red tomatoes, diced
    6 limes, juiced
    ? cup cilantro; chopped
    2 cups shrimp; peeled, de-veined and ready to eat
    2 tsp salt

    Directions:
    1 In a bowl, place the ready to eat shrimp and stir in the lemon juice, set aside
    2 Chop the onion very finely
    3 Finely dice the tomatoes (about ? inch cubes
    4 Chop the cilantro very finely
    5 Chop the habanero very finely - take out the seeds using gloves-
    6 Mix all chopped items in a bowl, habanero, cilantro, onion and the shrimp on lemon juice
    7 Season the mixture with salt to taste

    Eat it fresh, with nacho chips

    I caught the tail end of this recipe, as she was placing the bowl into the frig. Were the shrimp raw, pelled and deveined when she placed them in the frig, or were they cooked?

    SALSA ... missed this, too. Is this the same as pico de gallo?

    Love you on Food TV network. Finally....... wow followed you from PBS and i was scared when they only let you on for 6 episodes but Your BACK and i hope to Stay.

    This recipe followed to the T.... and it was easy and my Hubbie and son and daughter loved it. They like this Fresh shrimp receipe and the added ingredients were fantastic.

    First time I tried 'cooking shrimp' in citrus. It was a smashing success at a family gathering. Can't wait to introduce this shrimp dish to guests at a party. I'm disappointed that she doesn't have any more shows coming up. I like the different flavors her recipes introduced for me and look forward to learning more about the different spices she uses in her cooking.

    We love seviche and for those that are not 100% comfortable with the thought of "cooking" raw fish in lemon and lime juices...shrimp is a great start to get your hooked. This is a simple and fast recipe that will win you over - just so fresh and wonderful - - serve with your favorite cerveza...yummm!!
