    I only made a handful BUT they're awesome.... Made the recipe vegetarian: used soy chorizo, vegan mozzarella, and vegetable broth

    These are the best suffed mushrooms EVER! I substituted local linguica, which is very similar to chorizo, but a little less fatty & a little less spicy. It can also be bought ground, so that saves a lot of time! I use cremini mushrooms because I think they have a lot more flavor than the white ones and I use whatever cheese I happen to have on hand. Excellent!!!

    This is a fantastic recipe. I added a tablespoon of cayenne and used Swiss Cheese and Mexican Chorizo as I didn't have Spanish Chorizo orManchego and it still turned out so very good.
    As usual, Daisy Martinez NEVER disappoints. I own her cookbooks and will continue to buy her cookbooks as soon as they are published.

    I was planning on making these for my new years party, but had so much already planned, that I decided to bring them as a contribution for the new years day potluck. I made the stuffing ahead of time, had the mushrooms cleaned and ready and easily assembled these at the party. They were so flavorful and delicious, everyone loved them - this recipe is definitely a keeper.

    I love Chorizo and this recipe is a great way to use it. Made it twice and twice it was a hit. I can never get enough recipes utilizing Chorizo. I stock up when in Boston or New York. Thank god for GOYA Foods. Keep cooking Daisy. You are my inspiration

    These were really, really good and made a big hit. The chorizo added a great and unexpected flavor to the mushrooms. Daisy Martinez is a welcome addition to the Food Network.
