Ingredients
  • 300 grams (2 sticks plus 5 tablespoons) butter
  • 10 grams (about 3/4 teaspoon) salt
  • 500 grams (about 4 cups) flour
  • 7 eggs
  • Oil, for frying
  • Sugar, for coating
  • Chantilly cream, for filling
  • Wild berries, for serving
Directions
  • Special equipment: a deep-fry thermometer

  • Place the butter, salt and 2 cups water in a large saucepan and bring to a boil. Add the flour and stir until combined. Transfer the dough to the bowl of a stand mixer and beat in the eggs, one at a time.

  • Fill a large Dutch oven halfway with oil. Slowly heat the oil to 350 degrees F over medium-high heat. Line a plate with paper towels. Form the dough into golf-ball-size balls. Drop the balls into the oil, in batches if necessary (do not crowd), and fry until golden brown and cooked through, stirring occasionally, about 5 minutes. Transfer to the paper towels to drain. Let cool slightly.

  • Fill a bowl with sugar and then roll the frittelle in the sugar. Fill the frittelle with Chantilly cream. Serve with wild berries.
