This was incredible! I used this as a side dish instead of a tapas. I omitted the dates to make it a bit more Italian. Cut the aioli recipe in half (you don't need that much. I added a minced clove of garlic to 1/2 the aioli recipe. Once the cauliflower cooled off a bit I mixed in a few tablespoonfuls of the aioli. The Italian in-laws went crazy!!!

I had a head of cauliflower and was looking for a new way to prepare it. WOW! This was spectacular and I didn't even make the aioli. After reading the reviews I will have to give it a try. My only suggestion is to double the amount of cauliflower because it goes fast.

This is absolutely one of the best vegetable dishes that I have ever eaten, and my family thinks the same. A wonderful mixture of tastes and textures.
    Keep those recipes coming boys!

My family loves this...especially my daughters, the vegetable lovers. This is also a must at our next Thanksgiving Dinner.

This was wonderful. While I think the cauliflower may have dried out a bit, I drizzled it with more EVOO. The depth of flavor with the sweet dates and salty proscuitto with the bite of the red pepper flakes - it was great. I didn't think I would like the Aioli sauce, but gave it a try anyway. Glad I did! A perfect sauce/dip/topping for the cauliflower!

The sweetness of the dates melting into the brininess of the capers is an excellent combination. This is a winner! It was easy to make both the cauliflower and the aioli, but I would use less salt for my taste.
