I use about half of the oil and add white balsamic vinegar. My family and friends absolutely love it.

With local white corn in season, made this for a family party. It was a big hit. Great side dish/salad - refreshing, light, great flavor and texture combination. Used a serrated knife to take the corn off the cob; came off in whole kernals with no moisture/liquid (because of the roasting. Added lemon (in addition to the orange juice after reading other reviews

The salad was good, but lacking.... The recipe calls for the corn to be roasted in the oven... Next time I will start it off in the oven and finish it on my indoor grill for the charring. The favor are refreshing, but I felt it was missing something maybe a little heat from a jap or maybe some fresh ginger.... I added a little balasmic vinegar and that woke up my taste buds.

Easy and excellent! I have actually substituted with canned corn and canned manderine oranges. I halfed the oil. Just makes for a quick throw down salad and guests love it.

This salad has become one of my favorites and is always a huge hit at BBQs and parties. I especially love the vinaigrette! I use it on a lot of other salads too.

I made this salad for a friend and she loved it! The sweet of the mangos and corn, the crunch of the red onion and jicama married very well together!! great dressing too !

Great basic idea but I found it lacking in flavor. I added a minced jalapeno, a few dashes cayenne pepper, extra orange zest as well as about 2 T. additional orange juice. I have to believe the 1 cup of olive oil called for is a typo, as I found 1/4 cup to be about right.

This salad is absolutely delicious! It is light, has a wonderful flavor and very satisfying. I did added extra orange zest and used Splenda instead of sugar as well as added extra cilantro because that is one of my favorite herbs. It is a fantastic summer salad.

This is one of my standard 'bring along' recipes - you know, the stuff you bring to parties or barbeques. It always gets great reviews and is usually one of the first things to go.

If you have a hard time finding jicama like I do then substitute with canned/sliced water chestnuts.
