    My friends LOVED IT!!! I added a bit of chipotle juice, NOT a chili, to give it and extra kick and it was AWEEEESOOOOOME! WE COULDN'T GET ENOUGH OF IT!

    I made a view changes, I didn't roast the tomatoes, I used vine ripe tomatoes. I also added orange honey and used a whole orange very good. At first it was somewhat tart(maybe the mango but the orange helped out the flavor a lot. Yummy with chips and going to make it with chicken tomorrow.

    I made this for a family gathering at my house this evening. I only used zest and juice from one lime and two oranges, probably not as much ginger as called for, and canned diced tomatoes. But the flavors were fantastic. It was light and refreshing. The family liked it too, although my husband wouldn't even try it!

    This was a hit at the last family gathering I attended and was super-easy to make! I didn't use the ginger root however. I also didn't roast tomatoes- I just purchased a can of fire-roasted tomatoes and it was delicious!

    This was really good with the Spicy Fried Chicken. I can't wait to try it with the Pork Loin I am making for Girl's Night on Friday.
