Ingredients
- 1 pound French green beans (haricots verts)
- Kosher Salt
Directions
Fill a large saucepan with water, and bring to a boil. Add a handful of salt. Meanwhile, trim the ends off green beans, discarding any that are discolored or damaged. Add to the boiling water, and blanch for 2 to 3 minutes or until crisp tender. Drain the green beans. Immediately submerge in ice water to chill and to retain their bright color.
Alternatively, place the green beans in a colander. Place the colander on top of boiling potatoes to steam until tender, occasionally turning to cook evenly, about 3 to 4 minutes.

Can you just steam the trimmed french green beans and expect them to pick up some flavor from the pot that is underneath with the short ribs and veggies? Really?
Will they get tenderized as well?
I didn't think that to be a good idea and green beans were not cheap at the market today.
I did them my old fashioned way. A quick 3 minute bath with beef stock in the microwave and then an ice bath then dry and set them aside. Then I added them to the stew out of the oven to warm them up and mingle them with the flavors of the stew.

Niice and simple with a great hint for doing double duty--steaming the beans over potatoes...
