I really needed a recipe to use up all the wonderful zucchini from our garden. This recipe is perfect for that! My husband loved it but I was a little dissapointed. Make sure your grill isn't too high or you'll burn the bottom before anything cooks! I should have also sliced the zucchini thinner and put on less shallots.

Excellent taste and so easy to make. I am not allowed to have a grill in my building so I baked it in the oven. I just used the baking instructions on the pizza crust. Delicious!

Absolutely LOVE this flatbread. Make it in the summer on the grill and in the winter in the oven. Delicious savory flavors of shallots, zucchini, and parmesan (use good quality parm. reggiano combine with crunchy flat bread...knockout combination. I always get rave reviews and never any left over.
