I liked this a lot. I threw some sauteed tofu on top to make it a meal. Chickpeas are a great idea, or eggs I think. I liked the fresh tomatoes in it.
I see it as a concept recipe--a way to use up leftover veggies. Simple, quick and good.

I was a little leery of this dish, as I'm not a big fan of curry. However, the flavor's great - not overwhelmingly spicy at all. It was pretty easy to do; however, I found it took longer than 2 minutes for my spinach to wilt (at the end of the recipe. Also, you need a BIG skillet for this.

I made this yesterday after watching Danny make it on Rescue Chef. It was very quick and easy to make and delicious. I used red potatoes because that's all I had, and I followed some other reviewers suggestions to use tomato paste instead of the fresh tomato. I added the paste and a little water when I was cooking the onions and it made a nice thick sauce. Next time I'll add a can of chick peas to make a complete vegetarian meal.
I think Danny is a great chef. I always learn something new from him. He has a great, relaxed style and a fun personality.

This dish is excellent. Needed a bit of salt but easily corrected that issue. I always look for vegetable recipes that are different. Found it here. Full of flavor

Made this for dinner last night. My husband wanted a second helping instead of a piece of pie for dessert. I'm always looking for ways to incorporate more dark greens into our diet - this recipe fits the bill and is delicious. I don't think I'll use the tomatoes next time. Especially the bland hot house varieties I have access to this time of year. They don't add much. Maybe I'll try tomato paste as someone else mentioned.

I found this recipe very interesting since I love curry. I will definately try it and already passed it to my family too.
Like someone already said, I had a hard time finding his recipes, I liked the previous Food network website better. It was user friendly.

Your recipe was wonderful, but the Food network web-site sucks. Took about 1/2 hour of searcing to find the recipe. IF USING THE SEARCH ENGINE, WELL IT NEVER HEARD OF ANYTHING OR ANY CHEF YOU ASK FOR.
ask for Bobbie Flay and engine comes up Never heard of him

The overall idea for this dish is very good. I would recommend the following changes:
- Cut the potatoes smaller so they are more flavorful. This will help the curry coat the potatoes, and the salt to reach the inside during cooking.
- Nix the diced tomato. It totally disappeared by melting right into the dish. Next time I'll try a bit of tomato paste instead.
Also, I used Hot Madras Curry Powder which gave the dish a little zing. Loved the spinach mixed with the potatoes!
