    really good, but i make it with lobster stock instead and I also use poblanos instead of bell peppers

    I had the opportunity to have this dish at Darwell's. I have never been a fan of seafood but eating this dish changed the way I feel about seafood! I cannot wait to make this!

    Absolutely incredible meal! Couldn't find any crawfish stock so I substituted Seafood stock. Great flavor and easy to make. Makes plenty of food to go around.

    my hubby and i were on vacation on the coast..... the very first place we went to eat was DARWELL's!!!!!!!! soooooo goood!!!!!!!!! will def be driving back down again to eat there!!!!!! thanks to diners driveins and dives for airing the show!!!!!!!!!!!

    I have made this etouffee several times. Sometimes with Crawfish and sometimes with shrimp. It's a pretty easy recipe to follow. The only thing I did different and I know this is going to sound horrible but believe me it adds something great that was missing, is to add about 1/3 of a cup of Heinz Ketchup after the cream! The sweet and the vinegar from the ketchup just really helps round out the flavors! It's a really good recipe without the ketchup but it's a GREAT recipe with that one addition! Most etouffee recipes call for some kind of tomato and this one didn't which is what gave me the idea to try the ketchup. Be sure to use Heinz the other ketchups don't have the right blend of sweet and tart!

    Darwell's is incredible. On the best food vacation we ever did Darwell's Crawfish Etouffee was one of the Best. If you visit them make sure you also try the Shrimp Creole. Well worth the 16.5 hour drive. Thanks everybody and Go Pack!

    Lived inLong Beach for years before Katrina. My son just moved back and we plan on doing he same. My new best place to eat is Darwells. It is wonderful. The atmosphere is wonderful, feel just like I am in a Parrothead place and the food is to die for. The crawfish etouffee is fantastic. Also try the Cheeseburger Club. It is exactly what a burger should be. Crab Cakes are flaky and damn near melt in your mouth. My son had the Tuna Oscar and was in heaven. My 16 month old granddaugher gobbled down the beef tips and rice. Wonderful food, wonderful place, wonderful atmosphere and wonderful people.

    My husband and I took a road trip from Lafayette, LA for the 4th of July weekend with our desintation being "Darwell's". I must say it was a great experience from the time we stepped out of the car. First, meeting Poppa D, what a excellent host. We were greeted as though he knew us for years, friendly and very entertaining. Of course our "New Orleans Saints" Superbowl Champion t-shirts was received with excitement and enthusiasm! From there we were greeted by the hostess and Darwell's wife with a southern hospitality a Louisianian can appreciate. Darwell was awesome too, so friendly and never missed a beat when it came to greeting and sharing his love of cooking and his stories with you like you were an old friend. The special of the day was destiny for our entre', which was Pan fried red snapper over rice smothered in crawfish etoufee' and topped with blackened shrimp. The flavor was like popping fireworks for the taste buds. What a wonderful way to spend the 4th of July, wonderful food and gracious and friendly host. I can say there was defininetly a party going on in my mouth and that's not easy to do, since I too am a lover of food and Louisiana Cajun cooking. And who could pass up ordering the Tasso and Cheddar Cheese grits, to die for. The texture and flavors were absolutely heavenly. I definitely recommend Darwell's for the wonderful cuisine, gracious host and fun and funky decor. Thanks Guy for sharing this wonderful cafe' with us, it totally rocked!!!!!

    WOW is a great word to describe this recipe! It was fabulous! Fresh crawfish are rarely if ever available in our northern state, so I used frozen crawfish meat. I know it would be even more fabulous if they were fresh caught from the Gulf Coast, but don't shy away from trying this recipe if you don't have access to the real deal. It is still absolutely wonderful.

    My husband and I visit New Orleans regularly and look forward to a side trip to Darwell's the next time we go.

    This recipe was easy and it taste outstanding. I used chicken stock instead of fish stock and my daughter and husband loved it. As I am sitting here eating the left overs for lunch I am thinking what else can I put in this delicious flavorful dish. Using frozen crawfish is fine, just get rid of the liquid it comes with. I out shrimp and crawfish together seasoned with a little extra old bay. Fabulous.

    Great great great, please try, and be creative.
