I've made other apricot chicken recipes before, but the skin always got too black for me. This was great and easy.

glistening and gorgeous--If you're a sweet and pungent fan, this is for you. The chicken pieces sparkle in their apricot glaze and the sage gives enough bite so it keeps its integrity as a dinner not dessert. Feel free to replace prunes with any dried fruit. Dave's cauliflower side dish was perfect with this but, so was my tiny pasta shells with butter, sour cream and cheddar yum!

I needed something easy, fast, and flavorful...so I thought I would give this a try. I didn't use as much garlic(only 2 cloves, for 5 chicken thighs, and I didn't have any plums...but other than that I used everything else. It was sooooooo good! This would be great on the grill as well.
