Ingredients
Dressing:
- 1/4 cup cider vinegar
- 1/2 cup extra-virgin olive oil
- 1 shallot, minced
- Salt and freshly ground black pepper
- 2 bunches arugula, thick stems removed, rinsed and dried
- 1/2 pound radishes, thinly sliced on mandoline
- 1 red apple, peeled, cored and finely diced
Directions
Whisk together vinegar, olive oil, shallot, salt and pepper. Toss arugula, radishes and red apple together. Toss salad with dressing right before serving.

Perfect compliment to Gwyneth Paltrow's Tuna and Ginger Burger. I had everything on hand but the apple. I used 1/2 of 1 "Honey Crisp" apple, because I was making dinner for two. So the entire recipe was halfed. To suppliment the radishes I added daikon, it's good for the heart, so I love having this in my fridge. Great simple recipe!

I had a bunch of radishes and I didn't know what to do with them. This recipe was so easy and REALLY tasty and refreshing. I hate to use the same word as animemom, but "refreshing" is the best word to describe it. I made the dressing and put it in a bottle and just made a fresh salad as I needed one. Perfect. I loved the apple. And yes, you must use cider vinegar.
