This is the best black bean soup I have ever tasted, and it was so easy! I substituted w/ turkey bacon and put it over basmati rice as a side dish to go along w/ baked Mojo chicken...my roommates already want it back in the meal rotation for next week!

with this Black Bean Soup ! I'm enjoying a bowl of it right now. I too tweaked the recipe after reading the other comments. Just two items: crisp the bacon & substituting one can of beans for refried black beans. My fiance tried it and told me to "fill my bowl to the top!" Thank you for making me the cooking queen !

This was incredibly good on hopefully our last snowy day of the season. It would have been great as is but I took the advice of a few other reviewers and tweaked it a bit. I cooked the bacon til cripsy and used it as a topping. I added some cumin to add some smokiness that was lacking due to my bacon method I am sure. I had a red bell pepper that needed to be used to I chopped that and added to the onion. I used my immersion blender at the end and blended maybe a third b/c I like that consistency better. It was a little thick so I added about a third of a bottle of Corona. Also, as others did, decreased the amt of cilantro. It was awesome!

This was excellent and I will make this over and over again. What I did, and will continue to do, is cook the bacon until it released some fat and then I removed it from the pan and continued with the directions. Meanwhile I finished off the bacon in the oven to make it crispy and then once cooled, I crumbled it into the soup. Very, very good.

I just made this for hubby and he LOVED it! I did half recipe and used 1 can black beans with 1 can garbanzo beans (cuz that's what was in the pantry!. I also did without cilantro. Didn't have all the garnishes..but still turned out wonderful. One of those recipes you can change up a lil' and it'll be just as good!

Holy smoke - two hours until dinner and I can't stop "sampling" this delicious
soup. I followed the recipe except: one of the 4 cans of black beans was labeled "Cuban Style," the can of tomatoes was "stewed tomatoes" (all I had, and I ended up pureeing 3 cups of the soup in the blender before returning it
to the pot. Wow, I'm not sure I can wait for dinner....

I've been making this soup for a LONG time, and it is my absolute favorite. I substitute turkey bacon, otherwise I follow the recipe to the letter.

Just made this last night. The only thing I would change next time would be the amount of cilantro used. I love cilantro in fresh salsa but felt 1 bunch was a bit over powering in this dish. Next time I would use 1/2 to 1/4 bunch - again just my personal preference. I used about 5 pieces of bacon due to suggestions in other reviews posted here...but might actually bump that up more next time. I cooked it 'til it was crispy. Overall a pretty tasty dish.

I made this exactly as the recipe stated and it was the fabulous and delicious hit of the Superbowl party. The only thing I'd do a little differently next time is chop the bacon even finer and cook it a little longer before adding the onions; otherwise, it was perfect. Everyone asked me for the recipe.

This is more like a "stoup" as RR would say and feels like total comfort food. My husband likes all things with Mexican influence so asked me to make something with black beans. I looked up this recipe and made it this evening for dinner. It was quick, it was easy and it really was a five star hit. I served it as instructed, with a dollop of sour cream, some scallions for garnish and a sprinkle of shredded cheddar. I had sliced semolina on the table too for anyone wanting to scoop up their helping with a wad of flavorful bread. There is so much depth to the flavor of this dish...flavors you pick out right off the bat are the cilantro, the lime, the worcestershire, the tomato - so freakin' good, people, make it already!! The other thing that is worth saying, especially in this economy, is that this dish is CHEAP but NUTRICIOUS and will fill up your whole family.
