I agree that this is the best black bean soup recipe I've encountered - simple and delicious.
Just before serving, I pureed about 1/3 of the soup to give it a creamier texture. Very nice. This one's going in my personal favorites cookbook.

This was delish. I did add a couple of carrots, a bellpepper, and a couple stalks of celery all finely diced. I also used turkey bacon and reduced the amount of oil to make it a super healthy soup. And since I like my soup thick I pureed about 1/3 of it in a blender for a few seconds then added it back. An immersion blender would be even easier. Definately a 5-star recipe!

Delicious and easy. I made with the spicy corn muffins and we had a great dinner.

Years ago my first taste of black bean soup knocked my socks off - it had plenty of bacon that made it so flavorful. So when I found this recipe I had to give it a try, and have been delighted with it. I used only a fraction of the cilantro - I knew that using a whole bunch would completely overwhelm any other flavors. With that modification, this has become a favorite.

I had never eaten nor prepared black bean soup before last night but it looked so good I hadda give it a shot. I followed the recipe exactly as written. I got a packet of Mexican cheese bland to top the soup and used the same for those AWESOME corn muffins. The only change I made was to use less Chipotle in Adobo for the muffins because my son doesnt care for food too spicy and believe me half the peppers still made for a really nice spicy muffin. Great job Dave.

Because my dad is a vegan vegetarian, because of his RA and eats meat sparingly, I have to come up with dishes that he can eat when they come to my house. I thought this would be something different for him to try and something the rest of us would like too. He loved it and even asked that I e-mail the recipe to my mom so that she can make it. She makes it once a month now. Something I will definately be making again too.
