This soup is great! This is the third time I've made it. I add a little less bacon. After I add the beans, I let this soup simmer for about a half hour, covered. About 10 minutes after the beans are added, I take a potato masher and coarsly mash up some of the beans in the pot. SO DELICOUS! It's a MUST-TRY! Ps. Dont forget the lime.

I liked the soup, but I thought it was more like a chili. 10 Pieces of bacon was a lot, and I think next time I'll add 5. I pureed 1/2 the beans, which made it obviously thick, and I wouldn't do that next time either. I would definitely make this again with the noted changes.

LOVE this recipe!! I'm not a fan of chunky onions or tomatoes, so I completely pureed the soup, and it's sooo delicious! My changes/additions below
My adjustments/additions ...
* only used 3 pieces of bacon (just didn't want that much fat
* only used 1/4 of 1 onion (finely minced
* 3 cans of seasoned black beans
* 1 can of diced tomatoes
* 2 cups chicken stock
* 3-4 tbls of bottled lime juice
* 1 tsp+ (to taste of sea salt
* cracked black pepper
* 2 tsp cumin
* 3 tsp of minced garlic in place of 6 cloves
* 1-2 tbls of dried cilantro
I used the immersion blender in the pot to puree - but can also use food processor or blender ;o It's GREAT with sour cream or shredded cheese with french or italian bread for dipping. If you use an immersion blender, it only dirties one pot.

Nice hearty soup! I used fire roasted chopped tomatoes, replaced real bacon with Hormel bacon pieces to lower the fat content, added a little extra chili powder (& put in some cumin, and made it smoother by putting about 1/3 of it in the blender. Topped it with some avocado and sour cream...mmmm! Will def make this again :

Yummy! I quartered the recipe to try it out before considering making a huge batch, but now wish I had several more servings. I'm a picky eater and don't like solid bits/chunks of onion or tomatoes, so used onion powder and some tomato paste and added extra broth for the missing water from not using the real things. It's kinda chili-like and almost vegetarian...bacon doesn't count when not used as the main ingredient. ;- It'll probably be at the next potluck I attend w/ friends or co-workers.

FANTASTIC! This is by far the best soup recipe I have ever prepared. My children love it. I cut back on the bacon by half and it was still very good. I highly suggest giving it a try. Enjoy!
