    This recipe is to die for. It smells amazing and enticing just while it's simmering. I've recommend it several times already and EVERYONE LOVES IT... even children! Put a little good grated parmesan on top, just really adds to the experience.

    This soup is delicious and very easy. Added some finely chopped onion, carrot and celery and also added turkey kielbasa. Didn't have cannellini beans so I used a can of butter beans. Yummy! As my husband says, this is a keeper.

    I loved this soup! I added cut up Italian sausage and diced carrots, instead of the baguette. I will make this again. My toddlers loved it. Very easy to make and easy to add stuff to (even though it is not needed. Thanks!

    Fabulous! Wonderful aroma therapy! My whole house smells like an Italian kitchen. I am not a fan of kale so I used fresh chopped spinach. I would imagine that pasta shells and zucchini would be good in this. The base seems right for a minestrone! This soup tastes great! Reminds me of soup that was made in a fancy restaurant.

    Love this recipe. It has become a staple for me. I've had to make some adjustments simply because some of the ingredients are hard to find in rural southeast Arkansas. Kale seems to be very scarce in the local supermarket. Only small bunches at unreasonable prices. I was also surprised to see that my store did not keep cannellini beans in stock. I use frozen spinach and great northern beans. I also cut back on the oregano quite a bit, just half a teaspoon for a double batch. The soup is simple, quick to throw together, and so delicious. Oh, another substitute. It is the south, so I usually serve this with cornbread. You've made me look like such a good cook. Thanks

    I can't eat tomatoes but thought this sounded really yummy! I did make it but used a really good beef broth I like and added an extra splash of vinegar to help w/ the flavor I would lose by not adding tomatoes. I also added very thin sliced red onion. Topped w/ a bit of shredded mozzarella and it was delish!
