    I made these for my daughters bridal shower, which was a mexican theme and they went over really well. Not too difficult or time consumming. We made up the filling the day before, and just had to fill them the day of the shower. I would definately make these again.

    The empanadas turned out to be a BIG hit! I modified the recipe per the previous comments. I added goat cheese and white corn. The goat cheese added so much flavor and creamy texture, my family absolutely loved these. The next time I make these, I will make them a little smaller and I plan to make some for my co-workers as well! LOVED 'EM!!!

    I didn't pay attention and added double the chicken. I used the copious left-over filling to make chicken salad for my lunch for two days. Which was awesome in a pita. I will make this again in the future, but I will probably make some additions to jazz things up. Cheese for sure.

    I liked the ingredients, I put them together and greated one of the BEST mexican meals I've ever eaten. No kidding, you need to try this. It was fabulous!!!!

    This turned out to be a wonderful recipe for using what I had available to me in my fridge and pantry as substitutions: fresh thyme instead of cilantro; leftover frozen dark Thanksgiving turkey meat; an habanero/garlic spice mix instead of cayenne. The prep was a bit more laborious than it looked on TV, thus the 4 stars instead of 5.

    First of all, my college age son ate the chicken and luckily I had just enough for this recipe. Second, I bought filo dough instead of puff pastry. So, I punted and let me tell you, this is a delicious filling and salsa. You can skip the dough if you'd like. I used the filo, but with all the added butter, that would not be my first choice. This is so easy, you'll love it. You can also skip the chicken if desired as the flavors are just great!

    Tried the empanada tonight and loved the filling. I thought the pastry part was too time consuming and too bland. Will make the filling again for burritos or tacos.

    The salsa was a huge hit with the family, toddler included. I used a food processor and drained some extra liquid. Might add a few jalapenos next time for a bit more kick.
