    The family and i love quesadillas and after the first time cooking this we are hooked. Didn't change a thing. I even doubled the recipes a week later and served it over brown rice with a nice salad on the side. Very tasty :

    Excellent! A few revisions- I used chicken breasts & grilled them. I also rubbed them with the zest from from a lime & marinated them with cumin, oregano, & lime juice for two hours. I also used a shredded mexican blend cheese. YUMMY!

    I have finally found a good recipe for quesadillas! I didn't have serano chiles so I used some jalepenos from a jar. We like spicy and that was just fine for us. I will try with serrano's though. What to do with all of the leftover cooking liquid? Thats alot to waste - so I served it along side as a "salsa" dipping sauce. I'll make this again.

    I used Rotel tomatoes and peppers instead of just tomatoes. Both ways were good.

    My husband and I both loved these quesadillas. I used chicken thighs and it was excellent. Definitely season the chicken well as they will lose some of the flavor when simmered in the tomato sauce. I did not find this recipe very difficult, it just too a lot of prep. The white cheddar gave it a wonderful flavor and the chiles brought the dish together. I would definitely recommend and I cannot wait to make this one again.

    simple and delicious. I used chicken breasts and marinated/seasoned w/ "Goya adobo seasoning" and followed the recipe. excellent for entertaining. side w/ sour cream, salsa and guacomole.

    Dave--my kids love your cooking!
    I was nervous about this one--a New Yorker doing Tex-Mex hmmmm..BUT it was great! I used canned chipoltes instead of serranos to ease the spice and whole wheat tortillas AND we loved it!
    I served with sour cream and my three-year old couldn't get enough.
    My only complaint is Dave is not on enough!
