    I am extremely picky about potato salad. This is now my go to! Everyone in my family wolfed it down!! Also really easy to make!!

    This was the first potato salad I've ever made and it was extreemly easy to make and tasted absolutely amazing the second day. I left the celery out but added bacon, hard boiled eggs, cayenne pepper and paprika to it.

    This is a winner! Bright flavors that make it so delicious. I did make it one day in advance and refrigerate it but did not chop/add the dill until right before it was served. The texture was perfect and creamy without being overladen with mayo. I used apple cider vinegar and new red potatoes from the garden. Everyone loved it- adults & kids. Would highly recommend.

    I had fun playing with this recipe. Great sauce to it - I added a bit extra lemon and zest. It added moisure without being too "vinegar-ey". I had a small japanese eggplant, so I sauteed that with some oil and garlic and at the end a splash of balsamic. Put that aside to see if I liked it on top of the salad, and did, so mixed it in. I also chopped up celery, carots, an onion, garlic and a green pepper, stir fried it and tossed it in. I like having lots of veggies/crunch in potato salad (without too strong of any spicific flavor. I also chopped up fresh herbs from my garden and tried each one individually on bites. Really liked lemon-thyme, mint and basil. Didn't have any dill, but each of these others worked fabulously. Lemon-thyme and mint are two new favorite herbs that I love on salads!

    Yeah. . . I'm a fan. Easy to make, and great taste. A perfect summer potato salad.
