Very good chicken salad. Easy to make. Whipped it up for a ladies' tea and served it in lettuce cups to eat with our hands, along with the other finger foods. Nice and light. Flavorful. I also added diced green apples and dried cranberries to it!

Easy and very tasty! In fact, I had left over roasted chicken, and used that.... made this even easier and delicious! It's great in a lettuce cup, on a cracker, or right out of the bowl! Enjoy it this weekend!

I really enjoyed the curried chicken salad. Before I cooked my chicken, I dusted them with lots of curry powder, a little onion, garlic, and cumin along with salt and pepper. Then, I put the chicken in the pan with 1 tablespoon of canola oil. When the chicken was browned on both sides, I deglazed the pan with 1/2 cup of wine. Then, I poured the water into the pan and cooked the chicken for 45 minutes. The chicken came out very flavorful. The only changes I made to the dressing was I increased the curry powder to 2 teaspoons and sprinkled in some onion and garlic powder. With my changes, the salad was unbelieveably delicious!

I have made this twice; once with rotissery chicken from the store and once by following the recipe. I vastly favor using the store bought chicken as it added a lot of flavor. Also, to boost the flavor of the salad, I added a pinch of ground coriander. That really brought the flavors out.

I thought this recipe was so tasty and delicious. I did make a few changes. Maybe I had more chicken than called for, because I had to double the amount of dressing. I also added chopped cilantro to the dressing and served it on croissants. Everyone loved it!

I have made this about a dozen times so far and every time it is really good, such a crowd pleaser. I use a little more curry and use chicken breast instead of the thighs (easier than removing from the bone. Even people who don't think they like curry, were asking for more. Thanks Dave!

This was a great, refreshing lunch. I thought that it needed just something a little extra so I added chopped red onions and fresh cilantro to the mix and it was perfect. Easy to make!

Another suggestion if time is limited - use canned chicken instead of boiling the thighs. This will save SO much time! Enjoy.

All in all the recipe was good, however the chicken came out a bit bland. I think it needed a little more spice, or some different seasoning or something.
