This was the best couscous I've ever had. My husband doesn't usually like it, but once he tried this recipe, he was a convert. I'll definitely make this again (and again, and again!

Just finished making this to bring to a Memorial Day BBQ and can't stop picking at it! I used Near East curry flavored coucous which I bumped up with a little more curry power. Also added lemon zest with the lemon juice which made the dish sing! Do take the extra time to toast the nuts, it makes them taste so much better. Overall this recipe is one that I was a little scared to try, but am so glad I did! Thanks Dave!

I'm not a curry lover (or at least I think I'm not but I enjoyed this recipe enough to make it again and again (granted I cut the amount of currt powder just in case. I also subbed pine nuts for walnuts as that's what I had and what seems more Moroccan to me. My friend that HATES curry enjoyed this as well.

This recipe is great because it has a beautiful fresh flavor that isn't dependent on summer ingredients. There's nothing to the prep, either, only chopping. It's an extremely satisfying dish for a light lunch or side dish - love the cranberries in particular.

I have served this 4 times and been inundated with recipe requests. Love it, as di all the guests. I have added more cranberries and someraisins at times. Almonds and woalnuts work well too- but the toasting is important. This has made me a real DL fan.
    Thanks

I was skeptical about the combination of flavors of all the different ingredients; olive oil, curry and parsley? The flavors all melded together beautifully and it really is a delicious salad. I could hardly stay out of it after I made it. Great for easy make-ahead party fare.

I make this dish for all of my potluck dinners and BBQs. I get rave reviews every time! It's healthy and different from the normal prepared salads my guests expect. I highly recommend it!
