I made this dish for a picnic last summer and it's been a staple for parties ever since. Everyone raves about this recipe! I didn't have walnuts the first time I made this, so I used toasted pine nuts and it was delicious. This is a bright, colorful, flavorful, versatile side dish. I also enjoy it for lunch at work since it works as both hot or cold.

This recipe was incredibly simple to make and had a sophisticated palatte of flavors. At first the curry was overpowering, but the longer I let it sit, the more mellow it became. It was even better the next day, cold. The combination of sweet, salty, and spicey made it hard to put down. As others suggested, I used the whole 10 oz box of couscous as well as a whole orange and a whole lemon as opposed to half.

Served this as part of my very own cranberry-Iron-Chef party. Regrettably I gave what little leftovers there were away. Actually, maybe not such a bad thing, as it was just so tasty I could see myself sitting on the couch housing down the rest of it without abandon.

You should definately try this one. This couscous recipe is one of the best I've tasted. The cranberries and toasted walnuts make a wonderful combination. I love the idea of being able to make it ahead and leaving it at room temperature. I made it for my family and they loved it! Dave always has recipes that are easy, taste great and a little different from the rest. I will be using this as a side dish in the near future for sure. I did use the whole 10 oz box of couscous as other reviewers suggested. And I did cut the cranberries to 1/2 cup instead of 3/4. The 1/2 cup of cranberries was plenty. Enjoy!

This is a great dish. It is very simple to make and transports well. I frequently make this dish when we have a pot luck to go to. It is always the hit of the meal. The flavors blend together very well. YUM!

I needed a side dish to served with baked chicken breasts but didn't want to serve the usual potatoes or rice. I had on hand all the ingredients needed to make this recipe so decided to give it a go. What a lovely combination of flavours! Even my husband, who shies away from the unusual, loved this dish. I inadvertently forgot to add the olive oil but that didn't detract from the overall flavour or appearance of the finished product. We will definitely enjoy this dish again (and next time, I won't forget the olive oil!
